Baby Kale and Tomato Gnocchi with Lions Mane Mushroom Sauce
Ingredients:
- 1 package of potato gnocchi
- 2 cups baby kale, washed and chopped
- 1 cup cherry tomatoes, halved
- 1 onion, finely chopped
- 1 bell pepper, sliced
- 200g Lions Mane mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
1. Cook the Gnocchi: Bring a large pot of salted water to boil. Add the potato gnocchi and cook according to the package instructions. Drain and set aside.
2. Sauté Vegetables: In a large skillet, heat some olive oil over medium heat. Add the chopped onion and sliced bell pepper. Sauté for a few minutes until they start to soften. Add the Lions Mane mushrooms and minced garlic, and continue to cook until the mushrooms are golden brown and cooked through.
3. Prepare the Sauce: Pour in the heavy cream and grated Parmesan cheese into the skillet with the sautéed vegetables. Stir well and let the sauce simmer for a few minutes until it thickens slightly. Season with salt and pepper to taste.
4. Combine Gnocchi and Sauce: Add the cooked potato gnocchi to the skillet with the sauce. Gently toss to coat the gnocchi with the creamy sauce and vegetables.
5. Add Baby Kale and Tomatoes: Stir in the chopped baby kale and halved cherry tomatoes. Cook for an additional 2-3 minutes, allowing the kale to wilt slightly and the tomatoes to release their juices.
6. Serve: Divide the gnocchi mixture among serving plates. Garnish with extra grated Parmesan cheese if desired.
